1. Combine the sugar and pectin in a stainless steel mixing bowl. Mix thoroughly and reserve.
2. Slightly crush the saffron strands with your hands. In a medium-sized saucepan, cook the puree, lemon juice, and saffron strands over medium-high heat until boiling.
3. Stir in the sugar-pectin mixture. Bring the mixture back to a boil and reduce the heat to medium-low. Stir constantly. Cook the mixture to 217°F/103°C, or a sugar density of 62° Brix, about 10 to 15 minutes.
4. Let cool slightly. Cover the surface of the jam directly with plastic wrap to prevent the sugar from crystallizing. Use the filling at room temperature.
